You only need 4 ingredients for this deviled eggs recipe in order to make it, such as eggs, avocado, mango and lemon and I like to call it the FIT version of the conventional deviled eggs with mayonnaise and mustard.

The breakfast routine can be pretty much boring, especially if you are running late or just being used to have a cup of coffee on an empty stomach. I used to eat 5 days a week my personalized muesli made from scratch with oatmeal-rolled oats, fresh fruits, walnuts, seeds (chia seeds and flax seeds), mill/yoghurt and scrambled eggs on the weekends.
However, I decided to go on with improving my breakfast habit as I consider it as the most important meal of the day. If there is any time when the body is craving to get some protein, it is right after being deprived of muscle-repairing nutrients for the entire night.
Eggs are a very good source of proteins but mixing them up with exotic fruits makes them a fit and light choice for your breakfast. You can also simply have them as a snack.
That’s how I came up one morning with this strange but delicious combination of exotic fruits and hard-boiled eggs.
Come on, you must have heard of deviled eggs, the hard-boiled eggs, shelled, cut in half, and filled with the hard-boiled egg’s yolk mixed with mayonnaise and mustard,right?

- 2 eggs, boiled
- 1/4 avocado (and yes, avocado is a fruit)
- 1/4 mango
- a splash of lemon juice
- For this recipe you don’t need to stress yourself out for cooking the perfect hard-boiled eggs, which can take up to 15 minutes. Simply put the eggs in a saucepan, cover them by at least an inch or two of cold water and bring them to a boil. Let them cook for approximately 7 minutes.
- Meanwhile, prepare the fruit paste, by mixing the avocado, mango and squeezed fresh lemon juice in a bowl.
- Once the eggs are cooled, simply peel and cut them in half, remove the boiled egg’s yolk and arrange them on a plate. Add the yolk to the fruit paste by mixing them all with a stab mixer until the paste is smooth. Pour the fruits paste on top and serve them next to a couple of crackers, preferably multi-grain. (I personally like to eat them with fresh celery sticks).
