This rucola, blue cheese and walnuts salad served with roasted grapes makes for a great dinner – light enough not to knock you down so quickly, but surprisingly delicious from the roasted grapes to awaken your lust… for everything. I promise! 😉
I love everything about today’s salad. Have you guys ever tried roasted grapes? If not, you really need to. Not to mention, they pair perfectly with blue cheese and walnuts.
How to roast grapes? Toss grapes with olive oil, salt, and pepper, and roast them on a sheet pan for about 30 minutes at 180°C (~356°F). The grapes will get blistered and caramelized on the outside, and extra juicy and practically jammy on the inside.
To get fancier, throw some fresh herbs like oregano or why not rosemary in the pan—they’ll perfume the grapes, making them just the right amount of savory. Once they’re done, throw them in a salad of your choice with some good blue cheese and walnuts. Just keep it simple. Delicious. Light. Healthy.
Wait, before I forget, you also need a very good glass of red wine. Feel free to also add some crispy bacon. Permission granted! 😉
- 5 ounces /150g rucola
- 1 1/4 cups/4 ounces/115g walnuts
- 4 ounces /115g blue cheese
- 1 tsp. extra virgin olive oil
- salt and pepper to taste
- Dressing:
- 500 gr white seedless roasted grapes
- 1 tsp. extra virgin olive oil
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
- 1/4 tsp. oregano
- Preheat oven to 180°C (~356°F). Toss grapes with olive oil, salt, and pepper, and roast them on a sheet pan for about 30 minutes until grapes are nicely shriveled and semi-dried but still slightly plump. Let cool.
- Once they’re done, throw them in a rucola salad with good blue cheese and walnuts. Just keep it simple. Drizzle with just enough balsamic vinegar to lightly coat, tossing to combine. Season with salt and pepper and toss in more vinaigrette if desired. Enjoy!
